Frushi



As we prepare for our international adoption to Japan, we have been looking for fun ways to educate ourselves and prepare our 4 year old for the big changes that are up ahead. We already love sushi, so we decided to put a dessert twist on it and attempt FRUSHI ! It's a fun way to play with food and make something beautiful to eat!

C O M M E N T S & H E L P F U L T I P S:

I went to my neighborhood asian market to purchase the sticky rice and sushi mat. These items can most likely be found at any large grocery store that has an international aisle, but going to your asian food market is a fun way for you and your children to soak up some culture - FAMILY FEILDTRIP! It is also a great way to become inspired, I know I was.

I was very excited to do this together with my daughter. As she laid down for a nap I took that time to prep the rice and slice all the fruit. She woke up just in time to start her sushi roll. She loved being involved!

Wondering why you need a bowl of water?? The rice is SO sticky, so keeping your hands wet with water keeps the rice from sticking to you as you work.

When slicing your sushi roll, wet the knife between each slice. This helps the roll stay together as you cut, keeping it nice and pretty!

 

D I R E C T I O N S :

1.) Rice Bath - There is a starchy white layer on the rice that needs to be rinsed off. Simply pour 1.5 cups of rice into a bowl of water. Agitate until you see the water turn to a milky white color. That is when you know that the excess starch has been soaked off. Strain rice from the water.

2.) Cook Rice - 1.5 cups of rice to 2 cups of water in a saucepan. Mix in 2 TBSP of sugar and 1/4 TSP of salt. Once rice has begun to boil, cover and reduce heat to low and simmer for 15 mins. DO NOT STIR.

3.) Mix in Coconut Milk & Honey - Once rice has absorbed all the water you will add 8oz of coconut milk & 1 TBSP of Honey to rice and stir well. Immediately dump rice out into a flat pan to cool the rice and stop the cooking process.

4.) Prepare Fruit - Whatever fruit you decide on using in your sushi, make sure to cut them in long slender pieces. This allows easy rolling without anything trying to escape. (See photo below for a good visual)

5.) Sushi Roll - Take your sushi mat and lay and cover it in a layer of saran wrap. Then with wet hands (use your bowl of water so rice doesn't stick to your fingers) take a bit of rice and make a rectangle of rice about1/2 inch thick. (see photos below). Place your fruit out in a row. Once your fruit is packed in, you will roll it together.

** You first roll will NOT look pretty. It takes a minute to get a good strategy going, but find what works best for you.

R A S B E R R Y D I P P I N G S A U C E :

Puree raspberries with a TBSP of water. Add Honey and vanilla to taste.
